Some people find that baking is overwhelming. Mixing sugar, flour and eggs into a bowl seems like magic when all of that turn out to be cookies, cakes, or anything that gives sugar rush. Well, all the tricks behind that are just chemistry. Here are stories behind the magic:
1. Every ingredient has their specific chemical roles.
Believe it or not, baking is a chemical reaction process. That is why small or precise amount of ingredients are needed. You are actually making a controlled chemical reaction. However, the reaction could never happen if you put in wrong amounts of ingredients. Therefore, it is absolutely crucial to list down each ingredient in detail before all else.
2. Water is essential to each ingredient.
You may try to imagine mixing the ingredients together regardless of the orders and steps, it would then become a mess as all of the ingredients are struggling to grab water…so the batter will not be getting the form unless there is enough water.
3. Sugar is practically the main role.
If you think that sugar is there only to sweeten the mixture, you are wrong. In fact, sugar can bind to the water and prevent it from mixing with other ingredients. The culprit behind why your cookies and cakes are as hard as a rock is a result of too little sugar. Speaking of science…the absence of sugar induces flour protein to produce gluten. Now you understand why gluten-free food contains insane amount of sugar!
